Aujourd&#8217;hui il g\u00e8re l&#8217;entreprise familiale avec ses deux soeurs. La p\u00e2tisserie et les chocolats sont pr\u00e9par\u00e9s dans les ateliers derri\u00e8re l&#8217;unique boutique lyonnaise. Habituellement il y a 48 personnes et cela peut grimper jusqu&#8217;\u00e0 60 en p\u00e9riode de Noel. La technique est la m\u00eame depuis le d\u00e9but, tout comme le savoir faire, on se le transmet de g\u00e9n\u00e9ration en g\u00e9n\u00e9ration. Ici dix sortes de f\u00e8ves sont utilis\u00e9es, elle proviennent de loin : Java, Madagascar, Am\u00e9rique Centrale, Venezuela, P\u00e9rou. Elles sont tri\u00e9es puis grill\u00e9es, la torr\u00e9faction dure une vingtaine de minutes. Ensuit les peaux des f\u00e8ves sont enlev\u00e9es ce qui permet d&#8217;obtenir le gru\u00e9 de cacao.<br \/>Le m\u00e9lange passe dans une autre machine ou sont ajout\u00e9s le sucre, la vanille de Magagascar , du beurre de cacao. Le m\u00e9lange est broy\u00e9 puis il passe \u00e0 l&#8217;\u00e9tape du conchage. L&#8217;\u00e9tape de conchage permet d&#8217;enlever l&#8217;acidit\u00e9 du chocolat.&nbsp; Quand le chocolat sort de la conche, il va ensuite en chambre froide ou il est conserv\u00e9 \u00e0 une temp\u00e9rature de 15 degr\u00e9s.
