J\u2019avais vu quelques photos de ses g\u00e2teaux et aussi ses d\u00e9corations en chocolat l\u2019ann\u00e9e pass\u00e9e au salon du chocolat. Alors quand j&#8217;ai vu que la saison 4 de &#8220;Chef&#8217;s Table&#8221; portait sur la p\u00e2tisserie j&#8217;ai tout de suite eu envie de la visionner. J&#8217;ai beaucoup appr\u00e9ci\u00e9 l&#8217;\u00e9pisode deux, sur le glacier sicilien Corrado Assenza. Il travaille les desserts siciliens avec beaucoup d&#8217;amour et surtout avec des produits provenant de son ile. Je n\u2019en suis que satisfaite puisque j&#8217;attendais ce moment depuis longtemps. J&#8217;h\u00e9site encore quelle recette de cette nouvelle \u00e9dition je vais pr\u00e9parer. La viande est juteuse, assaisonn\u00e9 et cuite comme il faut. Il faisait 6\u00b0 degr\u00e9s \u00e0 Montmin, la raclette \u00e9tait donc de rigueur.&nbsp; Le Brezain est donc un fromage fum\u00e9 de Haute Savoie avec une p\u00e2te bien fondante. Il est fabriqu\u00e9 \u00e0 base de lait de vache pasteuris\u00e9, affin\u00e9 pendant six \u00e0 huit semaines puis ensuite expos\u00e9 minutieusement \u00e0 la fum\u00e9e naturelle d&#8217;un vrai feu de bois. Cela donnait un gout diff\u00e9rent des fromages \u00e0 raclette classique qu&#8217;on utilise habituellement.
