Est-il possible de trouver une bonne recette? Oui. Celle-ci provient du livre de Linda Lomelino. Enfin uniquement les ingr\u00e9dients car comme la cuisson propos\u00e9e (au bain marie) ne me plaisait pas, j&#8217;ai pris la cuisson propos\u00e9 par Marc Grossman (Un Gouter \u00e0 New-York). Une cuisson au four qui est bien celle du v\u00e9ritable cheesecake new-yorkais. Au final on a un cheesecake qui se tient, pas tremblotant et plut\u00f4t g\u00e9n\u00e9reux. Le plus il faut l&#8217;ajouter c&#8217;est le coulis de framboises. Faites fondre le beurre. Mixez finement les biscuits.<\/div>\n<div style=\"clear: both; text-align: center;\">M\u00e9langez les miettes et le beurre.<\/div>\n<div style=\"clear: both; text-align: center;\">Tapissez la p\u00e2te au fond d&#8217;un moule \u00e0 charni\u00e8re de 20cm de diam\u00e8tre, en remontant un peu sur les bords. Faites pr\u00e9cuire 10 minutes, laissez refroidir.<\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\">Cheesecake<\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\">Pr\u00e9chauffez le four \u00e0 225\u00b0C<\/div>\n<div style=\"clear: both; text-align: center;\">Fouettez le cream cheese avec le sucre, le zeste de citron, jusqu&#8217;\u00e0 obtenir une cr\u00e8me \u00e9paisse. Incorporez les oeufs, continuez \u00e0 fouetter encore une minute.<\/div>\n<div style=\"clear: both; text-align: center;\">Incorporez la cr\u00e8me fra\u00eeche l\u00e9g\u00e8re puis la farine. M\u00e9langez pour obtenir une pr\u00e9paration homog\u00e8ne. Versez sur le fond biscuit\u00e9.<\/div>\n<div style=\"clear: both; text-align: center;\">Enfournez pour 10min. Sans ouvrir le four, baisser la temp\u00e9rature \u00e0 90\u00b0C et prolonger la cuisson de 50min.<\/div>\n<div style=\"clear: both; text-align: center;\">Eteindre le four et laissez reposer pendant 1h puis laissez reposer hors du four et r\u00e9server au r\u00e9frig\u00e9rateur pendant au moins 4h<\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\">Coulis de framboises<\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\">Placez les framboises, l&#8217;eau, le sucre dans une casserole. Ecrasez les framboises \u00e0 la fourchette, amenez le m\u00e9lange \u00e0 \u00e9bullition.<\/div>\n<div style=\"clear: both; text-align: center;\">D\u00e9layez la f\u00e9cule de mais dans un peu d&#8217;eau puis incorporez-la au m\u00e9lange. Laissez cuire \u00e0 petit bouillons jusqu&#8217;\u00e0 obtenir une consistance plus \u00e9paisse.<\/div>\n<div style=\"clear: both; text-align: center;\">Passez au tamis. Laissez refroidir puis placez le coulis au r\u00e9frig\u00e9rateur.<\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\">D\u00e9coration<\/div>\n<div style=\"clear: both; text-align: center;\">Sortez le cheesecake du r\u00e9frig\u00e9rateur un quart d&#8217;heure avant de le servir. Enlevez le moule \u00e0 charni\u00e8re.
